Structure Notes: Long strands of amino acids are joined by peptide bonds (figure a) and arranged into strands which are then intertwined (figure b).

Method of Isolation: Gelatin is a heterogeneous mixture of proteins derived from animal collagen by hydrolysis. It is not found naturally. It typically is obtained by boiling bovine, pig and ox skin and bones.

Color: Clear jelly-like substance.

Intended Function(s): Used as a suspending agent. It is also used pharmaceutically in the manufacture of capsules and suppositories, has been suggested for intravenous use as a plasma substitute, and has been used as an adjuvant protein food.
